Citric Acid (Anhydrous)

Category: Food Ingredients - Food Additives
Citric acid anhydrous is a water-free, white crystalline powder form of citric acid with the chemical formula C₆H₈O₇ and a molecular weight of roughly 192.12 g/mol. Unlike citric acid monohydrate, it contains no water molecules in its crystal lattice. It yields slightly more active citric acid per kilogram than the monohydrate form. Its lack of moisture makes it ideal for dry powder blends, effervescent tablets, and moisture-sensitive formulas.
